Get this fresh, quick and easy but most importantly delicious recipe using fresh tomatoes.
Instructions ForTomato Sauce
4 lbs of Tomato seconds*
3 tablespoons Olive oil
1 teaspoon Salt
2 Cloves garlic, sliced
¼ cup Chopped fresh oregano
1 tablespoon Picked fresh thyme
¼ teaspoon Chili flakes
Remove any bruised or split spots from the tomatoes.
Sauté the onion in the oil, add the salt, and cook until the onion is slightly translucent.
Add the garlic, herbs, and chili flakes and sauté for another minute.
Add in the tomatoes and cook over medium heat until softened and the sauce is slightly thickened.
Season to taste and serve immediately.
Tomato seconds are the ones that are a little cracked, a little bruised, or a bit too ripe for slicing. Don't count them out yet, though. They make amazing sauce. With a bit of trimming, and some herbal accompaniment, those seconds will take center stage.
